Quick & easy side vegetable dish bursting with goodness & a bit different from the norm. Searing mellows the bitter taste of radicchio.

  1. Cut the radicchio in half and then into eight wedges. Rinse under running water and set aside.
  2. Mix the olive oil with the balsamic vinegar, sea salt and black pepper. Massage the mixture into the radicchio wedges.
  3. Heat a griddle pan and sear the radicchio for 4 minutes, turning so it cooks on all sides.
Recipe Notes

Searing mellows the bitter taste of radicchio. Red chicory is a good substitute if you can’t find radicchio.
