Wholemeal seafood spaghetti
The taste belies the simplicity of this recipe - probably why it's proved such a huge hit with students!

Instructions
  1. Bring a large pan of salted water to the boil.
  2. Meanwhile, peel and bash the garlic clove. Wash, deseed and finely chop the chilli. Wash and roughly chop the parsley. Wash, deseed and dice the tomatoes. Squeeze the lemon.
  3. SAUTÉ Warm the olive oil in a large frying pan. Add the garlic clove and chopped chilli and cook for 2-3 minutes.
  4. Add the seafood mix, diced tomatoes and half the parsley and cook for about 7-8 minutes on a medium heat, stirring frequently. Sprinkle with a little salt and a grinding of black pepper and add the lemon juice.
  5. Cook the spaghetti according to packet instructions.
  6. Drain the spaghetti and toss into the frying pan. Stir thoroughly to combine all the ingredients. Sprinkle with the remaining parsley and serve immediately.
Recipe Notes

A delicious, healthy one pot packed with quality protein, fibre, vitamins, minerals and essential healthy fats. If you don't have fresh tomatoes, use 250g of good quality tinned tomatoes instead.
