An easy fall-back meal, especially if you have some frozen chicken broth.   Chicken broth is extremely simple to make and you are rewarded with the base for a host of nourishing,  delicious dishes, plus a good quantity of poached chicken to use in salads and stir-fries.

  1. Put the broth in a saucepan and bring it to the boil. Add the tortelloni and a ½ teaspoon of salt. Cook on a medium heat according to packet instructions.
  2. Ladle into soup bowl and sprinkle with parmesan and a grind of black pepper.
