INSTRUCTIONS
- Drain the borlotti beans in a sieve and rinse under running water.
- Peel and bash the garlic clove.
- Heat the oil in a frying pan. Add the garlic clove and chilli flakes. Turn the heat down and gently brown the garlic and chilli, taking good care not to burn them because that would make the dish taste bitter.
- In a small bowl mix the tomato paste with 100ml of water.
- Add the borlotti beans to the frying pan, stir and cook for 1 minute.
- Add the tomato paste. Sprinkle with the oregano and salt and continue cooking for 5 minutes until the beans are warmed through.
