  • Quick and easy to get into the oven, soda bread is best eaten on the day it is baked or toasted the following day.

INSTRUCTIONS

  1. PRE-HEAT OVEN TO 200˚C/180˚C FAN/GAS 6
  2. Mix the two flours, bicarbonate of soda, bran, wheatgerm, oatmeal and salt together in a bowl.
  3. Beat the egg and buttermilk together in another bowl.
  4. Add the beaten egg and buttermilk to the dry ingredients and mix with a wooden spoon to a doughy mixture.
  5. Butter and flour a 2lb loaf tin and pour the mixture into it. Sprinkle the top with sesame seeds.
  6. Bake for 45 minutes. The bread is ready when the loaf sounds hollow when tapped on the bottom.
