This quick and healthy pasta meal is on the table in just 20 minute, perfect for weeknight dinners. You can use almost any pasta for this fast and fabulous recipe but creamy sauces work especially well with tagliatelle and any short pasta shapes.

INSTRUCTIONS
- Bring two saucepans of salted water – one large and one small - to the boil
- When the large pan of water is boiling, add the pasta and cook for about 10 minutes or as directed on the packet.
- ASPARAGUS Meanwhile, wash the asparagus and chop it into pieces about 2.5cm long. Cook it for about 3 minutes in the small pan of boiling water.
- Drain the asparagus and then plunge it into cold water. Drain again and set aside.
- Put the smoked salmon into a bowl and drizzle with lemon juice.
- Melt the butter in a frying pan. Peel and finely chop the shallot and cook gently for 5 minutes, stirring occasionally.
- Add the crème fraîche, asparagus, nutmeg, a pinch of salt and a good grind of black pepper. Bring to a simmer and cook for 2 minutes.
- Drain the pasta in the sieve or colander, reserving ½ cup of the hot water.
- Toss the pasta into the frying pan. Add the smoked salmon and mix thoroughly, adding the reserved water if the pasta looks too dry.
