INSTRUCTIONS
- Rinse the quinoa in a sieve under running water. Cover with water and leave to soak for at least 10 minutes. Then rinse again and cook according to the packet instructions.
- Meanwhile, wash the courgettes, top and tail them and then dice. Wash the peppers, deseed and dice.
- Peel and finely chop the onion. Wipe and finely slice the mushrooms.
- Warm the oil in a frying pan and add the onion. Sprinkle with salt and soften.
- After 4-5 minutes add the courgettes and peppers and cook over a medium heat for 5-7 minutes or until they begin to colour and soften.
- Then add the mushrooms and cook for a further 5 minutes.
- Drain the quinoa and add to the pan with the veggies.
- Stir all the ingredients together and cook for another couple of minutes. Season with salt and black pepper and leave to rest for a few minutes before serving.
