A delicious, healthy one pot packed with quality protein, fibre, vitamins, minerals and essential healthy fats. If you don't have fresh tomatoes, use 250g of good quality tinned tomatoes instead.

INSTRUCTIONS
- Bring a large pan of salted water to the boil.
- Meanwhile, peel and bash the garlic clove. Wash, deseed and finely chop the chilli. Wash and roughly chop the parsley. Wash, deseed and dice the tomatoes. Squeeze the lemon.
- SAUTÉ Warm the olive oil in a large frying pan. Add the garlic clove and chopped chilli and cook for 2-3 minutes.
- Add the seafood mix, diced tomatoes and half the parsley and cook for about 7-8 minutes on a medium heat, stirring frequently. Sprinkle with a little salt and a grinding of black pepper and add the lemon juice.
- Cook the spaghetti according to packet instructions.
- Drain the spaghetti and toss into the frying pan. Stir thoroughly to combine all the ingredients. Sprinkle with the remaining parsley and serve immediately.
